Answers to Expectant Dads' Top Questions

When my wife comes home from having our first child, I want to surprise her with a nice Italian meal. What is something very simple I can make that looks like I spent all day making it? I'm not much of a cook.
Vita Greco, author of the Italian cookbook La Dolce Vita and whose daughter is expecting a baby soon, shares a simple dish that anyone can make. "Have a chicken cut into small pieces," says Greco. "If you get it yourself, you can easily cut it with chicken scissors or any scissors that cuts through bone. You need the bone in the chicken, because it will be more juicy than without." The next step is placing the chicken pieces into a baking pan with a few potatoes sliced into small quarters or pieces. "Sometimes I put the potatoes in water and place in the microwave to parboil them," she says. Then, drizzle oil over all and add parsley, salt, pepper and oregano. Bake at 350 degrees F until well done.
When done, pour a can of drained peas all over. You can drain all the liquid from the chicken dish, and if you like, add a small can of plum tomatoes. "You'll love it!" says Greco. "I'm making it for my daughter and her husband, too. Good luck and blessings for the baby and family."
