Question:
I went to a warehouse club and bought several pounds of ground beef, since it seemed economical. Now I don't know what to do with it! Do you have suggestions on what to do with it -- should I cook it all at once, save some for another time, or what? Easy recipes preferred.

Going to warehouse clubs are a wonderful way to save money. I have bought plenty of meat, in bulk, and understand that once you get it home it can seem overwhelming. The first thing to do is sit down and decide what kinds of meals you would like to make. Does your family eat more meals using browned ground beef than say meat loaf or hamburgers? If you use a lot of browned ground beef than consider browning 1/2 to 3/4 of the meat you bought and freezing the rest as raw ground beef for a dish later such as meatballs and spaghetti. You can make hamburger patties with the raw meat, placing a piece of foil or wax paper between each patty and then wrapping them all in foil and freezing. This is such a time saver on a busy night. You can also make meatballs, fry or bake them, then cool and place in a freezer bag for a dish later in the week or month. Another idea is to make meat loaf, but double the recipe. Bake the meat loaf as usual and freeze the second loaf for another night with a nice bowl of gravy on the side.

Now if you wish to brown all the ground beef it's really easy to divide the meat up in dishes like tacos, spaghetti, stroganoff, chili or even beef vegetable soup. Just brown your meat in batches of 1 1/2 to 2 pounds and make sure you drain the meat well after browning. Allow your meat to cool, in the refrigerator is the best place, and then measure out 2 cups of browned beef to equal 1 pound of raw. I put 2 cups of meat in 1 quart freezer bags and then freeze. They are so easy to pull from the freezer, thaw in the refrigerator or the microwave on the defrost setting (following the manufacturer directions) and then use in what ever dish your cooking.
