Slice the eggplant and salt it. Let the salt sit on the vegetable for about 10 to 15 minutes then wipe the salty moisture off of the pieces. This process will get rid of the bitter flavor the eggplant sometimes has. Fried foods that are greasy are usually due to the oil not being hot enough. Choose oil that can withstand a high temperature (not olive oil, high oleic safflower works well). When you put the eggplant in the oil it should make a sound and begin to brown right away. If it quietly sits there, it's soaking up oil.
