Yes, eggs are a nice alternative to meats and other high quality protein sources. They are also good sources of vitamin A, D, and B12. The general recommendation is to limit egg yolk consumption to approximately four per week out of consideration to your cholesterol level, but egg whites (or egg substitutes) can be consumed in addition to those servings. Make them part of your well balanced diet.
According to the FDA, eggs should be kept refrigerated at all times because it hinders growth of Salmonella bacteria. It is also absolutely necessary to cook eggs all the way through, meaning the white and yolk are firm. Foods that contain uncooked eggs should be avoided until cooked -- ugh! -- no more testing the homemade cake batter or cookie dough before baking! I would also suggest a good hand washing after handling raw egg shells.
