Unfortunately, a safe level for alcohol consumption has not been determined. It is true the alcohol cooks off, but I have read that up to 50 percent of the alcohol remains even after cooking. Depending on how much you are using in the recipe, I think, would be part of the issue. If the recipe calls for 1/2 cup of wine and about 50 percent cooks off, depending on your portion size, you are probably consuming a very small amount of alcohol.
Look at the amount used in the recipe. If the recipe calls for a large portion of alcohol, then see if you can cut down on the amount. Can you use a couple tablespoons without jeopardizing the taste of the wine sauce? Cooking with alcohol is certainly not the same as drinking a glass of wine, or a beer. You are using less alcohol, about half of the alcohol content is cooking off, and you are not eating the entire product. You are only getting a fraction of the alcohol you started out with. You should do what you are comfortable with. I know there are many opinions out there regarding the safety of alcohol in cooking, or even in having one glass of wine. Since no safe level of alcohol consumption has been established, it is even harder to draw the line. Everyone is chemically different, and you never know what the outcome will be. I tend to be on the more conservative side, and say if you are questioning safety, err on the side of caution. It is never worth potentially harming your baby.
